It's not Christmas Eve in our house without finger foods and of course my cheese ball. I make mine two or three weeks ahead of time and leave it in the fridge to age...that is if I can keep everyone from getting into it before the 24th....LOL
1- 8 ounce package cream cheese
1/2 cup grated old cheddar (I always add more as it gives it a nice cheesy flavor)
1/4 cup sour cream
1/4 cup chopped green onions, (the green adds color as well as flavor)
dash of tobasco sauce
dash of Worcestershire sauce
Smoosh (yes that is a technical cooking term...LOL) it all together and roll into ball, wrap and store in fridge. Serve with your favorite crackers, bacon dippers go really well with this.
I hate the smooshing part, it's just really sticky....last year I decided my son in laws initiation into the family was mixing the cheese ball... LOL

Am I the only person who uses a food processor? I throw in a handful of pecans, chop finely, empty out bowl onto plastic wrap. Then mix up my cheeses, spices, and a tiny bit of brandy, and process. I empty out the bowl on top of nut-covered wrap, and pull plastic over it all to shape. The only things to wash are food processor and a spatula.

Sounds good!!!
I have a very similar recipe with one exception ..it calls for braunsweiger (sp???) and it includes the nuts rolled on with the saran or plastic wrap... cream cheese is mixed in with the meat and then also mixed with milk and spread like frosting on the "ball" and then rolled in nuts.....I just looked in my file and can't find the recipe...but my sister has it ...I will check with her and get it on here....its good stuff!

I'm not familiar with the "braunsweiger (sp???)", but that gave me a good idea...why couldn't you mix in or roll it in the real bacon pieces that you get in the refrigerated section??? Wouldn't that be good?!?!
