    Boiled Spice Cake
    350° Oven
    Grease 8X8" pan
    if your doubling use 9X13" pan
    (I usually do)

    Mix in a sauce pan, Bringing to a boil,
    reduce to lower heat,
    simmer for exactly 3 minutes.
    Set aside to cool, you can
    set the pan in a bowl of
    cold water to speed the cooling up.
    1 cub butter or margarine
    1 c. sugar
    1 c water
    1 c raisins
    1 tsp. cinnamon
    (I like to use Golden Raisins)
    1/2 tsp. cloves
    1/4 tsp. nutmeg

    Mix dry ingredients together:
    2 c flour
    1 tsp. soda
    1/2 tsp. Baking Powder
    1 tsp. vanilla
    1/2 cup chopped walnuts
    Bake for 30 minutes or until tester
    comes out clean. Let cool,
    turn out on wire rack.
    *Good idea is to line the
    pan with waxed paper after
    greasing and flouring.
    At Christmas time or to make it look fancy
    I cut into squares and roll or put cut pieces in a bag
    with powdered sugar. Makes a nice looking presentation..
