Or maybe you could cook one extra potato, mash it and stir it in for thickening. I think soups are made for experimenting and substituting. Try it and let us know how it turns out!

Glad you liked it! I made it last Saturday for supper. I cut the recipe in half this time (but still added the 2 cans of corn). Since I was not making it for a crowd I did not want as much leftover. A half recipe works just as well!
