So, you aren't using cake mix, but are using muffin mixes?

I need to try this with chocolate and angel food. It sounds pretty good.

I added the nuts to mine and it helped the texture as well. It's more like a sponge cake than a regular cake in texture. I've also used fruit to add to the flavor. Pineapple ring with a cherry on the bottom with some brown sugar made it like an upside down cake. I had to cook it a tad over 1 min. I use the spice and will add some more spices next time. I like it because it's just enough for a quick snack.

My family really like it. It's like a sponge cake but that was ok with us. They had no idea how I made it. I used icing on some and whipped cream on others. This is a super great little dessert that is so fast. Yeppe I say. Thanks for sharing this recipe.

I use German Chocolate with the Angel food. I like the taste, but the texture is one that you need to get used to. Still a good late night "cheating" snack.

And the grandkids love making "grandma cake in a cup" cake.

Made my first 3-2-1 cake last night after reading this thread. I mixed angel food and lemon cake mixes. Just to be sure I used lemon juice instead of water and wow, was it ever lemony, but good. I will definitely make more and try some new combinations.

The applesauce did the trick. Tonite I made it with applesauce in place of water; added chopped pecans and extra cinnamon, nutmeg and ginger. Now it's a keeper.

I guess the moral of the story is, add extra flavoring; stir-ins like nuts and fruits; use fruit juices to intensify flavors and spices if necessary.

Can't wait to try the applesauce. I made it last night with walnuts and cloves and cinnamon. Used the spice cake mix. It was really good. I also bought a marble cake to try but the lemon sounds really good. Especially for summer with maybe some fresh strawberries.

I used Angel Food cake mix and then with one, I used a poppy seed cake mix and the other, I used a Blueberry Low Fat muffin mix by Krusteaz.......both worked the same way.
