I've made this for years. It was given to me by a co-worker way back in the 60's and I treasure it.

Rice Custard

2 eggs 1/2 cup sugar, more or less to taste
2 cups milk 1 1/3 cups cooked rice
1/4 tsp. salt 1/2 tsp. vanilla and dash of cinnamon if desired.

Beat the eggs throughly, yolks and whites together.
Add milk, salt, sugar
Stir in rice and vanilla and turn into a baking dish
shake cinnamon over top and bake 20-30 min. in a moderate oven 350 degrees. Mine always takes longer to cook then that.

I put the baking dish into another pan with water when I put it in the oven. It cooks better that way.

Hope you like it. I always cook extra rice when I make rice so we'll have some for the pudding.'

You can also add raisins to this before cooking. We love it with the raisins.

This is a great recipe and very similar to my mother-in-law's. She puts in cardamom instead of cinnamon. Try it if you like cardamom. It is great! Thanks for sharing.

I forgot to add that you can tell when the custard is done by inserting a knife into the middle. When it comes out clean, it's cooked.

I also substitute stale bread toasted for the rice and make it a bread pudding or Grape Nuts for a Grape Nut pudding.

ahhh, this is the recipe my mother used to make. i have tried to year to remember it. and bingo, here it is. made my day ... i will make tomorrow. thank you
