    Default Frog Eye Salad

    Frog Eye Salad.
    1 Cup sugar,3 egg yolks,1/2 tsp. salt,2 tsp. flour, Juice from drained fruit, 1 large container Cool Whip.
    1 20 oz. can crushed pineapple, drained; 1 20 oz. can pineapple tidbits, drained; 2 small cans mandarin oranges, drained; 1 small package mini marshmallows; 1 box acini-de-pepe macaroni.
    Combine and cook until thick the sugar, flour, salt, juice and egg yolks. Melt marshmallows with cooked mixture. Cook macaroni, rinse and cool. Combine macaroni and cooked mixture; refrigerate overnight. Next day, add pineapple, oranges, Cool Whip. You can add any other fruits , like bananas, grapes.

    I usually make half of this recipe, because it is still a huge bowl. And I use the whole egg , because I am not going to throw out the whites. Sometimes before I add Cool Whip, if I don't want a bunch made up I just add Cool Whip to a small bowl of the fruit and pasta, other wise it will set for a few days and get watery.

    Thanks for posting. I never heard of this salad before. If I need to whip something up, I usually go using the 5 cups salad, 1 cup of sour cream, coconut, mandarin oranges, pineapple and tiny marshmallows. refrigerate overnight.

    This is one of our family "get together" staple. The reason it's called frog eye salad is because the acini de Pepe macaroni, when cooked, gets glassy and looks like frog eyes! We love it and it goes fast when the whole bunch of us are together.

    It is very small beads. You can also use any small rings pasta.
