I heard a story once...You all may have heard this one already.
A woman got a ham and cut it in half and put each half in a pan to roast. Her daughter asked her why she did that and she said that was the way you cooked a ham because that was the way her Mom always did it. The daughter asked her Grandmother why she did it that way and she said, "Because I never had a pan big enough, so I had to cut it in two!"

I have heard a variation of that story and totally believe it! My mom used some ingredients because that was something she always had in house! So, I've learned to just use her recipes as a guide line for sure.

After many years of cooking, I just learned that on your finger from the first knuckle to the tip of yourfinger=1 tsp., and first knuckle to tip =1Tbs.

Since your hand and mine aren't the same size, each of our products will be uniquely ours. My cooking reflects me. I like being me.

I don't use a recipe when cooking. I do measure when baking but not when cooking.

My DD is a great baker but I think I am a better everyday cook (plus I don't make nearly the mess she does!!) However, I have learned from her, that cooking is an art--modifications and substitutions can be made to most any recipe one is cooking. Baking is a science with very precise interactions among the ingredients. Changing the ratios will usually lead to disaster.

OK...I dunno the difference between a round and a heaping teaspoon. Inquiring minds want to know.

A heaping spoon full is when you put the spoon in flour and bring out as much that will stay on the spoon. A rounded spoon full is one that has a little more than the actual spoon will hold. A level spoonful is one that has been filled and leveled off with an edge to be the same dept as the spoon.
