I just want to thank Sondray for the wonderful recipe "Inside Out Cake" - I made it for a potluck last night and everyone loved it. One man told me it was the best dessert there.

Simple to make, but delicious!! I used the Yellow cake mix.

Thanks again Sondray!!

Inside Out Cake

1 Box yellow cake mix
4 eggs
1 C. Oil
1 C. water
1 can pecan coconut frosting
1/2 C. chopped pecans

Preheat oven to 350 degrees

Beat cake mix, eggs, water & oil for 2 minutes. Add pecan coconut frosting and chopped pecans and mix well. Bake in bundt pan. Bake 45-50 minutes or until toothpick inserted in middle comes out clean. Remove from pan while still hot. A very moist cake and does not need any frosting. Can use German Chocolate cake mix for a very moist chocolate cake.

This sounds yummy .. couple of questions ... as I am not in USA do your cake mixes state 4 eggs to be added, I think ours are generally 2 and some oil. What is your frosting ? Is it like prepared icing paste? and what is a bundt pan?

Most US cake mixes ask for 2 or 3 eggs.
This frosting is a caramel based prepared frosting that has coconut (maybe 4 ounces?) and pecans (about the same) chopped in it. You could make the same idea with a boiled frosting of butter and brown sugar and adding coconut and pecans.
A bundt pan is a 10 cup shaped pan with a hole in the middle, similar to an angel food pan but has decorative scallops instead of straight sides. I'm guessing the hole in the middle keeps the cake from overcooking.
