My favorite dinner is hot potatoes (boiled or mashed) with fresh tomatoes and corn on the cob! Forget the meat, the bread etc! Delicious combination, tomatoes and potatoes!

I went on a cattle roundup when I was in my early teens and the lunch special made by the ranch cook was fried potato sandwiches. Mankind! With butter on the bread, salt and a generous helping of pepper and sizzling potatoes right out of the pan--nothing is better! But you have to fast for two weeks either before or after eating. froggyintexas

If you like a little kick to your mayo ad 1/4 t ground chipotle pepper to a cup of mayo. Similar to the Kraft brand of chipotle mayonnaise and much cheaper.

I'll take a pass on the cucumber and peanut butter. I make my favorite summer sandwich this time of the year when the Jersey tomatoes are big and ripe. Toast some white bread, spread some mayo on one piece, add thick slice of tomato (tomato has to be as big as the slice of bread), bacon, lettuce and mayo on other piece of toast. Only time of the year I buy bacon. Just found a new way to cook a pack of bacon with out the mess, bake it in the oven on cookie sheets at 450, very little shrinkage and was so crispy. My brother Jim used to make himself fried potato sandwiches when he was a kid. Just the potatoes, no salt, pepper or catsup.

I love fried potato sandwiches . Mom use to fix these for us when we were kids. We thought they were such a treat. Today children probably wouldn't think so, but to us it was.

Mother would make herself onion sandwiches with mayo. Grandson loved Cheetos on his peanut butter sandwich! Personally, I haven't tried either. We all liked cucumbers and onions marinated in vinegar, little water(if you don't like strong vinegar), salt and pepper. I sometimes made sandwiches from this.

A good Georgia Summer sandwich consisted of: soft white bread, lots of mayo on each slice, sliced Vidalia onion and thick sliced tomato.....we call it a sink sandwich, cause you usually had to hold it over the sink as it dripped unless you wanted to clean up. Can also add a thick slice of bologna.......yum in the sun.
