My family loves my Rhubarb Custard Pie
Mix 1 1/2 Cups Sugar
1/4 Cup Flour
1/4 tsp Nutmeg
Dash Salt
Add dry mixture to 3 beaten eggs and beat smooth.
Stir in 4 Cups sliced Rhubarb.
Pour into 9 inch crust (my favorite recipe at end)
Crumble topping:
1/3 Cup Sugar
3/4 Cup Flour
Cut in 6 Tbs Butter till crumbly.
Spread crumbles over rhubarb.
Bake at 400 degrees for 45 - 50 minutes. Delicious!!

My favorite Easy Crust
1 1/2 Cups Flour
2 tsp sugar
1/2 Cup Oil
2 Tbs Milk
Combine ALL ingredients with fork in 9 inch pie pan. Pat mixture across bottom and up sides of pan. Poke holes in sides and bottom with fork.
If baking empty, bake 15 minutes at 400 degrees.

This my favorite way to eat rhubarb too. Had a rhubarb tart the other day for lunch, it had nuts in the oatmeal cookie topping, sure did want to lick the dish but I was with my grandson in a restaurant.
