My family always made rhubarb upside down cake. My mom uses a white cake mix,brown sugar, and I think some white sugar also.
Make the cake as the box calls for it.
Cut the rhubarb into pieces.
Grease or oil your pan as the box says.
Put the rhubarb on the bottom, then some brown sugar and some white sugar.
Then pour your cake mix over the rhubarb. And cook as
directed.
Let it cool and add cool whip or pour milk over it and enjoy.
It may not sound like milk would be good over it but I think it is good. I also put milk over my chocolate cake.

I will check with my mom I do believe you use both sugars not very much mind you. But I want to make sure I am giving you the correct directions. I think I will be getting some rhubard this weekend. That sounds so good.

My mil used to make the rhubarb, and the rhubarb and strawberry pies.

Sometimes I just cook chopped up rhubarb in a small amount of water until very tender. Add sugar as desired and a touch of salt (helps with tartness). I love it over ice cream or just the rhubarb. I do this when I don't want to bake pie or crisp. I also love the cake--either added to white cake mix or upside down.

Forgot--Rhubarb refidgerator jam is good.

My mom use to find it growing wild and cook it up .It was slimy. Years ago while visiting my husband aunt, she had made a strawberry-rhubarb pie. That was good.

the most wonderful smell in the world...freshly mowed rhubarb. used to drive my neighbor nuts!!! ...it can get out of control...and sometimes you just can't get it all eaten and baked up...

charlee, i made your rhubarb bread, its absolutly yummy!! the two girls love it too!!
I think rhubarb crisp is like a crumble & I also made rhubarb & stawberry bars!! Diet is on hold til everything is eaten!!: ))

Rhubarb Dessert
Crust:
1 c. flour
1/2 c. butter
2 tblsp. sugar
Filling:
1 1/2 c. sugar
2 tblsp. flour
1/2 c. cream
3 egg yolks
1/2 tsp. salt
2 1/2 c. rhubarb
Meringue
3 egg whites, whipped
6 tblsp. sugar
Combine first 3 ingredients to form crust. Pat into 8X8X2 pan and bake for 15 min. at 350.
Combine filling ingredients and pour over crust. Bake for 45 min.
Top with meringue and bake until lightly browned.

Rhubarb Nut Bread
1 1/2 c. brown sugar
2/3 c. cooking oil
1 egg
1 c. buttermilk
1 tsp. salt
1 tsp. baking soda
1 tsp. vanilla
2 1/2 c. flour
1 1/2 c. rhubarb, diced
1/2 c. nuts, chopped
1/2 c. sugar
1/2 tsp. cinnamon
1 tsp. butter
Combine first 10 ingredients. Pour into 2 greased 9X5 loaf pans. Blend sugar, cinnamon and butter. Sprinkle over batter. Bake at 325 for 60 min. Do not overbake.
