About the only way I'll eat rhubarb is in a rhubarb bread...
Ingredients: 1 1/2 c diced raw rhubarb 1 1/2 c brown sugar 2/3 c. oil 1 egg slightly beaten 1 c. sour milk 1 tsp. vanilla 2 1/2 c. flour 1 tsp. salt 1 tsp. soda 1/2 c. chopped walnuts pinch cinnamonProcedure: Topping- 1/3 c. granulated sugar mixed with 1 Tbsp. melted butter. Mix brown sugar, oil, & egg together. Sift salt, soda, flour & cinnamon together. Add dry ingredients alternately with milk to other mixture. Fold in rhubarb and nuts. Fill 2 lightly greased loaf pans 2/3 full. Sprinkle with topping. Bake at 325 for 1 hour. |

Yikes - not compost... please! I'd give my eye teeth for some rhubarb right now. It's SO expensive, and is in the grocery stores such a short time every year. Many of them don't even order it! Arrrrggggg! Friends, Romans, and Countrymen... send me your rhubarb! <G>

My husband loves stewed rhubarb with raisins. It is delicious cold with toast. or as a topping for ice cream or cake. Just simmer rhubarb in a bit of water and sugar to taste and raisins. Simmer and add more water if necessary. good luck with the rhubarb.

Can you post your rhubarb bars receipe, would love to try it. Have so much rhubarb this year I think because of the rain.
