Stir any kind of fruit (your pineapple and anything else you may have) into yogurt, top with granola and you have a kind of healthy dessert! I also grill my pineapple and love it that way!

Thank you so much everyone for all the wonderful suggestions and websites. I've spent a good part of the afternoon checking them all out. I never knew you could do so much with fresh pineapple - I always thought you had to cook/bake only with the canned. Guess you're never too old to learn. Funny - a couple of years ago I never had a problem with pineapple - oh, the glories of getting old! Anyway, I think I'm going to have to buy more fresh pineapple to make all the recipes I want to try. Thanks again. Your responses have been great.

You could make a fresh pineapple salsa. It's very easy to make and pretty too!
Just dice the pineapple into small pieces. Add 1 small, diced red onion and juice of 1 lime. Mix, cover and refrigerate an hour or two. This can be used with fish, shrimp, chicken, etc. Delicious.
Note: If you have access to key limes, use them, but otherwise, regular limes will work too.

I would cut it a little smaller.

I put fresh pineapple, kiwi, strawberries, bananas, grapes, pears, blueberries, or any other fruit in with a can or two of drained mandarin oranges. I use the juice from the oranges and mix it with a box of sugar-free Creamcheese, White Chocolate, or Vanilla instant pudding mix. Then I pour that over the fruit and mix it up. Everyone that's tried it has loved it.

I just took a package of fresh frozen pineapple out of the freezer for breakfast tomorrow. It freezes beautifully. Eat what you can and freeze it in amounts that you can eat another time.

Suggestion.....I have same problem with fresh pineapple and fresh tomatoes....course, I overdose when I get them! I rinse my mouth out after indulging with a baking soda and water mixture. It will cut the acidity...sure helps me!

I dont know if you have an Aldi store where you are but they have Del Monte Fresh pineapples for .99 :shock:

I picked up a few from there yesterday and they are really tasty!!

Just read how it hurts your mouth when you eat it. Does teh same thing to my DD, but she actually starts to have an allergy reaction where her throat swells.
She can eat canned pineapple just fine.

Many great recipes. Hope you find one to use. I like it cut up on cottage cheese. All the fruit with the dressing sounds yummy, too.
