Thanks again, everyone. All your ideas are super. I'll keep the baking ideas in mind and I really like the suggesions for mixing it with other fruits and pudding or eating it with cottage cheese. For sure I'm going to try the baking soda mouthwash idea!
Yes, I do have an Aldi's nearby, and that's where I bought mine - for .89! I was afraid there would be something wrong with it, like all rotten inside or something, because pineapples in my local super markets were $3 and $4 ! But it was delicious. The markup in food in just amazing, isn't it? |
I don't know if anyone else has heard of this, but I just love Paula Deen's Pineapple Casserole recipe. I made it the first time and told my son what was in it (now the BOY was about 27 at the time) and he said he would never eat it. Well after just a taste, he ate 1/2 of it. Now he requests it often and so do his friends whenever he goes over for a potluck dinner. If I am serving it for a dinner I make two just so I can have leftovers.
Ingredients 1 cup sugar 6 tablespoons all-purpose flour 2 cups grated sharp cheddar 2 (20-ounce) cans pineapple chunks, drained, and 6 tablespoons pineapple juice reserved 1 cup cracker crumbs (recommended: Ritz) 8 tablespoons (1 stick) butter, melted, plus extra for greasing pan Directions Preheat the oven to 350 degrees F. Grease a medium-size casserole dish with butter. In a large bowl, stir together the sugar and flour. Gradually stir in the cheese. Add the drained pineapple chunks, and stir until ingredients are well combined. Pour the mixture into the prepared casserole dish. In another medium bowl, combine the cracker crumbs, melted butter, and reserved pineapple juice, stirring with a rubber spatula until evenly blended. Spread crumb mixture on top of pineapple mixture. Bake for 25 to 30 minutes, or until golden brown. |
It's wonderful with chili-lime salt sprinkled on top. Adds just the right amount of spice with very little heat. Yummy.

Bake your pineapple with some chicken thighs & my 1-2-3 sauce or with teriyaki pork chops, etc. Or just bake as a less acidic dessert.

I put fresh pineapple, kiwi, strawberries, bananas, grapes, pears, blueberries, or any other fruit in with a can or two of drained mandarin oranges. I use the juice from the oranges and mix it with a box of sugar-free Creamcheese, White Chocolate, or Vanilla instant pudding mix. Then I pour that over the fruit and mix it up. Everyone that's tried it has loved it. |

I make coleslaw with it just pineapple and mayo and mix with precut coleslaw from the store
