Grease a medium-size casserole dish with butter. In a large bowl, stir together the sugar and flour. Gradually stir in the cheese. Add the drained pineapple chunks, and stir until ingredients are well combined. Pour the mixture into the prepared casserole dish. In another medium bowl, combine the cracker crumbs, melted butter, and reserved pineapple juice, stirring with a rubber spatula until evenly blended. Spread crumb mixture on top of pineapple mixture. Bake for 25 to 30 minutes, or until golden brown. |
Can pineapple be frozen? You could save some for another time.

try hawaiin pork chops.my family loves it over rice.
brown chops then put in casserole dish add pineapple, green pepper, on top mix together in bowl 1/4 cup apple cider vinegar 1/4 cup ketchup 1 tbsp sot sauce (we like to use tariyaki sauce0 2 tbsp brown suger pour over the stuff in the casserole dish bake at 325 till chops are done .they are real tender then you don't even need a knife. |
I know you asked last March --- but here's one recipe I do with pineapple...VERY simple and VERY good!
Slice pineapple into wedges....remove the core Mix 1 cup sugar with either lemon or lime zest (doesn't matter how much) ---- in a plastic bag. You can squish it around until the zest is mixed in good. Dredge the pineapple in the sugar mixture till coated and lay out on wax paper on a cookie sheet. Pop it on the BBQ along with your meat and cook till warmed thru. Sometimes you'll get a nice brown "crust". It's yummy!!! |
