I bought a fresh pineapple which is so sweet and juicy - it's wonderful. However, it cuts the inside of my mouth and I'll never be able to eat the whole thing by myself. I have it all cleaned, cored and sliced into wedges (like Dole Pineapple Chunks) in the fridge.
Does anyone have any ideas as to what I can do with it? The only thing I came up with is to saute some of it in butter and a little brown sugar and serve it with a ham slice. Any other ideas would be appreciated. Thanks |
you could always, make little pinapple upside-down cakes, like the size of cupcakes and eat some and freeze the rest.

Toss it with some fruit fresh, and it will freeze well. Then you can use it in fruit salad, or whatever when you want. Or cook it in something to make it softer so it doesnt hurt your mouth.

You could dehydrate it. Fresh pineapple does the same thing to my mouth, but I love it!

Dried pineapple chunks are just like candy!

I like to take a large container of cottage cheese, add about a half of a bag of small marshmellows and a can of chunky pineapple. Stir together and chill..good as a salad or dessert. The marshmellows make it sort of sweet. I'm sure you could use the fresh pineapple as well.
