Pumpkin Chowder
8 ounce package of bacon, diced
2 cups onions, chopped
2 tsp curry powder
2 Tblsp flour
1 lb pie pumkin, peeled, seeded and chopped
2 potatoes, peeled and cubed
4 cups chicken broth
1 cup half and half
salt and pepper to taste
Garnish, toasted pumpkin seeds, sliced green onion
Brown bacon over medium heat in a stockpot for 5 minutes: add onion. Saute for 10 minutes, add curry and flour, stirring until smooth and creamy, about 5 minutes. Add pumpkin, potatoes and brothe: simmer until potatoes are tender about 15 minutes. Add half and half, season with salt and pepper. Simmer for 5 minutes. DO NOT BOIL. Spoon into soup bowls, garnish with toasted pumpkin seeds and green onions. Serves 6
