I have one that you make in a crock pot.. Take a small pork roast or tenderloin, place it in crock pot. Grate two small potatoes, mix with the sauerkraut and about 1 1/2 T caraway seeds.. Let cook on low for 5/6 hours.. About half way thru take two forks and shred the pork.. I serve this with mashed potatoes.. Very good

Here you go: Reuben Sandwich Casserole http://old.post-gazette.com/food/20020704ruebenp9.asp

This is a great casserole when you have a lot of folks over in the cooler/colder months and want something other than cold sandwiches. It is addictive, though!

    Default Kraut

I make a great kraut salad to put on beans. No cooking, just mix and refrigerate.

Sauerkraut balls. Drain a can of sauerkraut, squeeze out some of the juice. If it is stringy I chop it a little. Brown a pound of breakfast sausage and break up the chunks and drain the grease. cool. Add 3 oz crean cheese and sauerkraut. Chill. Roll into balls. Dip in a beaten egg and bread crumbs. Deep fry until brown. I have also baked them to save calories. Very yummy.
