help me make fudge
every year I'm going to make this and I get disappointed. some years we had to use spoons,, which wasn't all that bad. grainy sometimes. Oh what to do! maybe I'll just buy it. Please help.

Actually, I think fudge would be wonderful eaten with a spoon--creamy. I bought the ingredients to make some this year, but haven't done so yet. 'm waiting for granddaughter's visit. We made a gingerbread visit when she visited about two weeks ago. But we both love chocolate. Good luck!

The biggest tip I can give you.... #1 Use a nice heave sauce pot. (good quality) It makes a huge difference. #2, Use a candy themometer (it has to be the right temperture. #3 Watch closely #4 (said with a big smile) all these trial runs is going to make you an expert. Yes, I still can't make good fudge. But my mom still tries to coach me through. lol, I can't make pies either. They come out looking picture beautiful. They taste horrible. (garbage material) LOL. I make a lot of fudge over the holiday. The simple kind, Never Fail Fudge on the marshmallow fluff jar. Sometimes instead of the semi sweet choc chips, I use white choc chips, peanut butter chips or butterscotch chips. Love them all. Good luck

easiest fudge ever and SOOOOO good!
"Fudge Tout de Suite"
1 lb. powdered sugar
1/2 c. cocoa
1/4 c. milk
1/2 c. butter
1 T. vanilla
1/2 - 1 c. chopped nuts
Sift sugar to remove lumps -- if there are none, don't bother. Place in 8-cup micro-safe bowl and stir in cocoa. Add milk and butter. Don't Stir. Zap on high for 2 minutes. Remove and stir well to mix. Add vanilla and nuts; stir to combine. Pour into greased dish. Place in freezer for 20 min. or fridge for 1 hour. Cut into squares and cuss the day I told you about this!

This is the recipe I've been making since the 70's. Never had it fail.
FANTASY FUDGE
¾ c. margarine 1 (7 oz) jar marshmallow crème
3 c. sugar 1 c. chopped nuts
1 (5 oz) can evaporated milk 1 tsp. vanilla
1 (12 oz ) pkg. semi sweet chocolate chips
Microwave margarine in 4 qt bowl on high 1 min or until margarine is melted.
Add sugar & milk; mix well. Microwave on high 5 minutes (stir after 3 min.) until mixture begins to boil. Mix well, scrape bowl.
Microwave 5 ½ min. (stir after 3 min)
Stir in chocolate chips until melted.
Add marshmallow crème, nuts and vanilla, mix well.
Pour into buttered 13 x 9 inch pan. Cool at room temp. Cut into squares.
Yield: 3 pounds.
For peanut butter fudge substitute 1 cup peanut butter for the chocolate chips.
12/18/09 mistakenly put in whole 18 oz jar of crunchy peanut butter & it was the best fudge!! No problems setting up either.
Dec 2011- Used peanut butter chips in place of peanut butter & worked great
