Add some regular yellow mustard and balsamic vinegar. Went to TGIF once and theirs was really sweet. So I asked for some mustard on the side. Chef came out wanted to know what was wrong and I told him. Nothing wrong, I just always added mustard on the bun. At home my DH makes his own BBQ sauce and he has almost 1/3 mustard. We give it to friends and they always come back for more.

You can add vinegar, or you could try rinsing it off and adding your favorite sauce. I like a vinegar based BBQ sauce. There is a place in Atlanta that has the best sauce. Vinegar and lots of black pepper. mmmm
Just take a small amount and try the variations. If you still can't get it right, put the meat in chili. You can hide anything in chili.
