    Thanks everyone for all of the suggestions. That cake recipe is something that I'll have to try.

    We've decided to go "semi-vegan," because we have a friend that is in need and he is not vegan. Therefore, I'm going to make his absolute, favorite dish: Arroz con Camarones, or shrimp with rice. I am going to do all of the sides vegan except for the pumpkin pie. He'll get his very, own pie. I am resisting my husband's suggestion that he come to our house to eat, because of the covid thing, but I'm going to make him up a giant, care package and have the DH deliver it to him. I'm including a card to explain why we can't all be together and to wish him thanks for his friendship.

    Some of the vegan sides are:

    mashed potatoes
    mushroom gravy
    stuffing
    rolls
    cranberries

    None of these really go with Arroz con Camarones, but it will all be good, non the less.

    Ooohhh...Bloody Marys are good. I forgot about those. I have a nice Pinot Noir instead. Boring., but I'm thankful for it.

    I feel like I'm in a Thanksgiving time warp today. I was making some bread stuffing and using a recipe out of my head. I was wondering how long I should bake it for, so I went to my Gramma's cookbook. None of the recipes even considered that you would bake stuffing/dressing on the side. It is supposed to go into the bird, don't ya know, so there was no time listed. So, I went online to see and all they seemed to have is instant-pot recipes and I don't have one of those. I feel like I'm stuck somewhere in the middle.

    I'm just baking it at 350 for about 45 minutes. If it gets dry, I'll add some stock and cover it with foil.
