I made thanksgiving shepheards pie
cornbread dressing for bottom crust, gravey, turkey and veggie filling mashed potato top.

My mom makes turkey salad-- similar to chicken salad, but with sweet pickle relish instead of grapes/pecans. It is always yummy.

Lately we use the turkey to make cat food using a recipe given to me by the vet (It's cheap and way better for them), but we used to make turkey sandwiches, complete with homemade cranberry sauce and fresh baked whole wheat bread. No mayo or anything required. DH used to hate the leftovers, but now he looks forward to his turkey sammies.

I make a casserole with the leftovers. Layer of dressing, later of mostly turkey breast slices and cover with turkey gravy. Bake for 30-45 minutes in 350 degree oven. Can't eat this or Thanksgiving dinner without canned jellied cranberry sauce. About the only time of year we can eat turkey and absolutely never eat deli sliced turkey.

I made turkey soup with veggies and barley. Next will be turkey enchiladas. Yummy!

So far its been Turkey and Rice soup-Turkey with gravy on biscuits and a huge Turkey pot pie And more sandwiches then we can count and we still have leftovers. So maybe the rest can be turned into a nice pot of turkey veggy soup. Next year I will try to remember that a 15lb bird is a whole lot of turkey LOL
