    I'm doing thin pork chops, rice pilaf and salad tonight. I might throw together a pear up-side-down cake as well.

    We went to town for seafood. Ended up frying Strawberry Grouper for dinner. When asked if we ever tried it, I told them that I have caught one before while fishing for snapper! Funny enough, we also made strawberry ice cream with frozen strawberries.

    Husband requested white creamy chicken enchiladas for supper tonight. it's gloomy and rain here today so sounds good to me.

    Some rain is coming in and temps are starting to drop. Yesterday I took advantage of the best weather of the week to take the dogs for a walk at the leash free park near us. Since I was already out of the house I stopped by our local Butcher Shop/Lunch Counter/Deli, park is a mile or two one direction at the intersection, butcher shop another mile or so further down the main road.

    It was getting towards the end of the day so their ground beef (already a reasonable price) was marked down, 5 lbs for less than $25. I fired up the Weber and cooked them all as hamburger patties. That was dinner last night and tonight, and the rest the hubby will shrink wrap/freeze. While he has the sealer out, we also got a 5 pound package of bacon the other day that we need to portion out/freeze. We do our bacon in the oven, I use the Air Fryer mode since I have one, line a sheet tray with parchment paper, and cook for about 20 minutes.

    Tonight I also have some green beans from the farmer's market to cook up to have along side the patties.

    A good, life-long friend is coming to visit today. She was my next door neighbor from the time I was born and we've kept in touch over the years. I'm very excited to see her and talk story! My Dau and SIL are also coming up to have dinner and meet her. I'm serving, build-your-own pizzas and a salad for dinner. I've started to prepare all of the toppings: sauteed mushrooms, roasted peppers, sauteed Kuri squash, hot, birdseye chilies, onions, olives, blackened shrimp, homemade sauce, several kinds of cheeses and homemade dough. My Dau is bringing some wine and goodies from the winery that she works for. I haven't thought of what to make for dessert yet. We have a ton of pears, so maybe some poached pears in wine?

    I had the most amazing dinner last night. Hubby and I went for a date night to a local Mexican place, El Gallo in East Peoria. Regional Mexican food is so interesting, not just from the different regions of Mexico, but from the different interpretations that become localized in the US. Anyway, I had "molcajete" which is brand new to me but is apparently fairly common in this area. Sort of like fajitas but in a (heated) stone bowl and with nopales. Yes, it was much more than I could eat, the portion was very generous. Hubby was able to help, his choice was shrimp diablo, and without the rice and beans (his keto diet), he could use some extras. Plus, we took quite a bit home which will be my lunch today.

    Cool! Sounds yummy! I love Mexican food, so matter where it's from. ("Molcajete" is a Mexican, stone, mortar and pestle...great for grinding up spices and such.)

    Last night we had "Bowls"...kind of similar. Ours had beans and rice, roasted sweet potato, roasted veggies, cubes of pan-grilled chicken breast, yogurt cream cheese, beans, peanut sauce, chili oil. Even my kid liked it. I'm making progress!

    I don't know what I'm making tonight. I've been prowling around the eatingwell.com site to find some interesting and healthy recipes. Lots of choices there. I'm thinking of pumpkin something...maybe a soup, or maybe an Indian dish.

    I made a large pot of Southwestern soup. I used a small can of Rotel tomatoes with hot peppers and even though it was a small can the soup was too spicy. We like spicy but dang! Now I’m trying to tone down the spiciness without losing the flavor and texture of the original soup.

    We are having whatever is left over in the fridge or cook you own food. I'm not interested in being in the kitchen. This time change has me in a sour mood.

    I went to one of the local supermarket chains around here I don't usually go to, Schnucks, and bought a package of their store-brand brats, a jalapeno and cheese option. Their ingredients were pretty pure, I felt the price point was good, and yes indeed, the brats came out great. For me they were not too spicy, but any time you are dealing with fresh pepper their heat can vary. Will buy again! While typically out of the way for me, now that I am seeing my chiropractor, that is just around the corner on a weekly trip.

    I par boil mine for about 7 minutes in the microwave, then put them on the grill for a nice char and finish cooking.

    Schnuck's is a chain based out of the St Louis, MO area. They carry a bunch of "ooey gooey butter cakes'" which is a regional treat I had never encountered on the west coast. Being low carb I should not get too introduced...
