    Last week we had people around - so had lasagna (from grocery store) and chicken enchiladas (my own), coleslaw, garden vegetables, peaches on ice cream and now we have leftovers today. Love Love Love these kind of days. Grandson coming Wed evening to visit. Kids have learned if they give me advance notice, they’ll get a meal.

    Oooo, love that braided pork loin idea. We buy it regularly because of the price point and low fat quality (good thing there is bacon involved). I usually cut them into 3rds for about 3-4 pound sections but I think I can do this whole or pretty much... have to measure the "baseball bat of pork" against the smoker.

    This recipe didn't use bacon, but gave me the visuals I needed to be sure I understood (which I did). Mostly I'm putting this link here so it will tickle my thoughts...

    This is the video that inspired my dinner. Pork loin is larger than pork tenderloin.

    aashley -- your version is much more human sized and the bacon fits/looks so pretty. The big'un I linked is more of a way to get more flavor into what can be a pretty bland piece, plus presentation.

    Here's another recipe we really like where we use the big loin instead of the tenderloin -- GingerK this is also keto friendly!

    I had my time saver version of stuff peppers made and in the freezer . it's thawed and ready to bake. I'll make rice with it. Salad from the garden. Well every meal has a salad now, produce is ready to pick everyday. Also made the time saver version of lemon pie. This pie is so good especially if left in fridge over night.
    I found this recipe in my grandmothers kitchen cabinet hand written on a church bulletin. Lucille must have brought the pie to a church potluck.


    Lucille's Lemon Ice Box Pie

    1 - 8 oz Sour Cream - low fat or whatever
    1 - regular size box of vanilla instant pudding- can use no sugar one, no difference in taste.
    1/2 cup lemon juice or lime juice add more to taste
    1 8 oz carton Cool Whip or other

    Mix sour cream and pudding mix, all lemon juice, fold in cool whip, put in prepared graham cracker crust and put in ice box for a few hours.

    It is hot out there, but tonight will be Kirkland (raw) brats from Costco. I also like the Italian Sausage. I parboil in the microwave first, half a pack for 6 minutes maybe? The whole thing for 10 minutes. And then finish them on the grill. Crisp on the outside, cooked on the inside, but not overdone/burnt and I don't have to stand over them the whole time. Just put them down for a couple minutes, turn for a couple more, and then a final turn (or two).

    We typically have kraut and/or raw cabbage on hand for sides. Also pickles are reasonably keto friendly if you don't have to worry about salt.

    Heard there's a new Costco withing an hour drive. Have to see what they have.

    Now that I'm single, my cooking is getting a revamp. Got any ideas for cooking for 1?

    These are on sale right now. I use them to help take care of my brother. Freezer, microwave, and dishwasher safe! (We don't reuse). They would be great for creating another meal for later from leftovers.
