Tonight is noshing night. I have lots of leftovers that can be turned into little bites...artichokes, asparagus, mussels, clams, shrimp, toasted bread, fruit. All out on a platter for picking and chatting. No wine tho...dang.

We had Blackened Mahi, green beans, and a simple salad with lettuce and avocado topped with homemade Ranch dressing. I mix my own Blackening seasoning from Paul Prudome (sp) recipe book.

Costco run so Rotisserie Chicken... still love those things but maybe only get once a month. We had some leftover green beans and mushrooms that were great, and other leftovers that maybe weren't so great.
Today for lunch I am allowing myself some carbs, I bought a loaf of a nice multigrain/seeded bread. I have some lovely ripe tomatoes, and I also bought some cream cheese and sprouts. Going to have one of my 70s Vegetarian sandwiches - yay sprouts! I find a sprinkle of pepper really compliments the tomatoes.

I chopped up some leftover pork shoulder roast and added a mixture of leftover gravy, sauteed onion, garlic and about a cup of keto friendly bbq sauce. I covered it and let it simmer in the oven for an hour. DH made himself some sauteed cauli rice and I had sweet potato fries in the oven.
Have you ever tried frying carrots in butter? I had a BIG carrot. I peeled it and cut it into rings--a bit thicker than 1/4 inch. I fried the rings until golden on both sides, then threw some frozen peas over and gave everything a good shake. It only took a couple of minutes for the peas to heat thru. OMG!! I think we have a new favourite veg!!

We had friends over for BBQ. Spontaneous. Beef fajitas, homemade refried beans, queso, and grilled onions/peppers. Friends brought trout filets that were caught in the bay /their backyard. She taught me to make "boats" from foil to grill them. And her homemade tartar sauce. Mmmm. Oh, and a Betty Crocker chocolate cake, no icing, just well sprinkled chocolate chips all over before bakng. (icing is just too sweet)
