    Here are a few of my favorite recipes.

    Rhubarb Upside Down Cake

    5 cups rhubarb, cut thin
    1 (3-oz) pkg raspberry jello
    1 cup sugar
    1 (10.5-oz) pkg miniature marshmallows
    1 yellow or white cake mix

    Spread rhubarb on bottom of pan; sprinkle jello, sugar and marshmallows over all. Mix cake mix according to instructions and pour over top. Bake at 350° for 1 hour. Tip out on foil and shape foil up around edges. Use 9” x 13” pan.

    Apples may be substituted and appropriate flavor jello.


    Rhubarb Bread

    Ingredients
    1-1/2 cups packed brown sugar
    1/2 cup canola oil
    1 egg
    1 cup buttermilk
    1 teaspoon vanilla extract
    2-1/2 cups all-purpose flour
    1 teaspoon baking soda
    1 teaspoon salt
    1-1/2 cups chopped fresh or sliced frozen rhubarb
    1/2 cup chopped walnuts or pecans

    TOPPING:
    1/2 cup sugar
    1/4 teaspoon ground cinnamon
    1 tablespoon cold butter
    Directions
    In a large bowl, combine brown sugar and oil. Beat in egg. Beat in buttermilk and vanilla. Combine the flour, baking soda and salt; stir into brown sugar mixture just until combined. Fold in rhubarb and nuts. Pour into two greased 8-in. x 4-in. loaf pans.
    For topping, in a small bowl, combine the sugar, cinnamon and butter until crumbly; sprinkle over batter.
    Bake at 350° for 60-65 minutes or until a toothpick inserted near the center comes out clean.
    Cool for 10 minutes before removing from pans to wire racks. Cut with a serrated knife. Yield: 2 loaves (16 slices each).



    Rhubarb Cream Pie

    11/2 cups sugar
    3 Tbsp flour
    1/2 tsp nutmeg
    1 Tbsp butter
    2 beaten eggs
    3 cups cut rhubarb

    Blend sugar, flour, nutmeg and butter. Add eggs; beat smooth. Add rhubarb. Put in 9 inch pastry-lined pan. Top with pie crust. Bake in hot oven 450° for 10 minutes, then in moderate oven 350° for about 30 minutes or until done. Pie should be bubbling before taking it out of oven.


    Rhubarb Cookies

    Beat:
    4 eggs
    2 cups sugar
    Add and Cream:
    2 cups shortening
    4 tsp vanilla
    2 cups brown sugar
    Add & Mix:
    3 cups fine cut rhubarb
    2 cups coconut
    2 cups nuts (optional)
    Add & Mix:
    9 cups flour
    1 tsp baking powder
    1 tsp salt

    Bake 375° for 12 minutes

    350 degrees for 1 hour (less in a glass pan)
    judith ann I have been making this recipe for almost as long and my family loves it also, just made some this morning as my kids & grandkids will all be here for bbq later today Yah

    Raspberry and rhubarb pie!!! 2nd to that is strawberry rhubarb pie. They are made the same just using different fruit. It's easy to freeze, too. Just cut it up into slices and put into freezer bags. Flatten them and freeze. When you are ready for pie, just add the chosen fruit and follow your favorite recipe. Yummy!!

    This recipe sounds good, but 9 cups of flour? What is the batch size?

    That's easy.....Rhubarb Pizza. Sounds bad but it is a dessert pizza and is delicious.

    Combine:
    1 cup flour
    1t baking powder
    2T shortening
    1 egg
    2T milk

    Make like pie crust and press into pizza pan

    Mix in bowl:
    3 cups diced rhubarb
    1 pkg strawberry jello (or any red jello)
    1 cup sugar
    1/2 cup flour
    1/3 cup melted butter

    Put on top of crust

    Bake at 350.....about 45 minutes

    Cool and cut like pizza...YUMMO!!!

    I take 1 package of frozen rhubarb and frozen strawberries (each 20 oz) or the equivalent of fresh produce and add i small pkge of Jello sugar free gelatin dessert with a little water(about 1/2cup) and simmer on the stove till cooked thoroughly. This is available then thruout the year and not only when they are in season. Little or no calories and always delish!
