    At Christmas time, i make a spiced cider/cranberrry drink in my crockpot. This year we had nachos/tacos so i had 3 crocks going!
    There are tons of recipes online for crockpots and slow cookers.

    So, now that Anael has finallllllllllyt ordered a crockpot ... we should all share some recipes!

    SewMom ... you have me intrigued about your crockpot desserts ... would you favour us with a recipe or two, please? Thanks!

    Anael ... sure hope that you have many good meals now that you have made the plunge into crock cooking! Otherwise, I am the one to be blamed!


    ~~~~~~~~~~~~~~~~~~~~
    Crockpot Scalloped Potatoes
    ~~~~~~~~~~~~~~~~~~~~

    3 tbsp. butter
    1/4 cup all-purpose flour
    1 tsp. salt
    1/8 tsp. pepper
    1-1/2 cups milk
    1 to 1-1/2 cups shredded cheddar cheese (optional)
    5 medium potatoes, peeled, and sliced thin

    Butter the bottom and sides of the crockpot.

    Combine butter, flour, salt and pepper in saucepan over medium low heat. Whisk in milk gradually until no lumps remain. Heat and stir until bubbly and thickened. Stir in cheese til melted. Add potatoes and stir, just to coat. Then put all into the crockpot.

    Cover and cook on low for 5 to 7 hours.

    Notes:
    * I did not use the cheese and followed the recipe otherwise.

    This recipe came from one of the Fix-It and Forget-It cookbooks.
    No Fat Apple Cake
    1 C. Flour
    1 C. Sugar
    2 tsp. baking powder
    1 tsp. cinnamon
    1/4 tsp. salt
    4 med. sized cooking apples, chopped
    2 eggs beaten
    2 tsp. vanilla

    Combine flour, sugar, baking powder, cinnamon, and salt.
    Add apples, stirring lightly to coat.
    Combine eggs and vanilla. Add to apple mixture.
    Stir just until moistened. Spoon into lightly greased slow cooker.
    Cover, bake on high 2 1/2-3 hours.
    Seve warm. Top with ice cream or whipped topping.
    Variation: stir in 1/2 cup broken walnuts or raisins with apples.


    The first time I made this I had an extra apple so i added that too. It was sooo yummy!

    Same book
    Slow Cooker Pumpkin pie pudding

    15 pz. Solid pack pumpkin
    12 oz. can evaporated milk
    3/4 cup sugar
    1/2 cup Buttermilk baking mix
    2 eggs beaten
    2 Tbs. Melted butter
    1 Tbs. Pumpkin pie spice
    2 tsp. vanilla
    Whipped cream

    Mix together all ingredients except whipped cream. Pour into greased slow cooker. Cover and cook for 6-7 hours on low or until thermometer reads 160 degrees.
    Serve with whipped topping.

    Looking good, SewMom ... Will have to try them one of these times.
    What consistency are they when made?
    I am thinking the applecake is probably fairly dense?
    And the pudding ... is it cake like as well? though with pudding in its name, I'm wondering?

    The apple cake is a little dense- with the extra apple it was like baked apples with a little cake around it. Very moist.the pumpkin one is pretty much like pie w/o the crust.

    Thanks SewMom ... the pumpkin must be like the impossible pumpkin pie, that you oven bake. Anael and I both like apples and cinnamon, so I can almost guarantee the apple one will be made first!

    Anael ... Wonder if you will beat me to it?

    I have a smaller one using it today cooking Pasta Fajoli Soup, I could only cook half the recipe at a time in mine, but it sure tastes good and is almost done....
