Default Zucchini Noodles

Ingredients

2 whole Zucchini
1 Tablespoon Butter
1 Tablespoon Olive Oil
2 cloves Garlic, Minced
3 whole Roma Tomatoes, Diced
1/4 cup Shredded Parmesan
3 whole Basil Leaves , chopped
Salt And Pepper, to taste

Preparation Instructions
Use a vegetable peeler to peel long ribbons of zucchini.
Heat a nonstick skillet over medium-high heat and heat the butter and olive oil. Add garlic when butter melts and stir 1 min. Add the zucchini and toss around in the pan for 1 to 2 minutes. Sprinkle in salt and pepper. Add the tomatoes and Parmesan and toss to heat.

Serve within a few minutes, before the zucchini get too soft!

It's so quick....about 10 min. start to finish and zuchinni is plentiful right now. I try to cook quick meals in this hot weather. In the picture, I actually used a can of Italian seasoned, diced tomatoes and it tasted like spaghetti.

Looks SO yummy! Save some for me!

My son gave me one of those Veggie spiral cutter thingies. This would be a perfect time to use that. Thanks!!
