I personally hated sewing w/ knits but was easier w/a serger but sold it and my embroidery machine to focus soley on quilting w/a newer machine specifically for quilting.

42 x10 inch squares. You will lose 1/4 inch on all joinings. You could easily do a coordinating border w/one if the colors say 3-5 inches wide. Then use another of the colors for the binding.
