I like the first layout the best. I would use the same colors to make larger and bind with the dark whether you leave it as is or go larger.

I would put a small 21/2 border in red all the way round .Then a 41/2" border of black and grey or just plain black.

ps I prefer the top pattern diagonals matching.

Very cool. Option 1 is perfect. I would try different bright solids for binding -- no border.

I like the first quilt top shown. I'm not sure if I would use anything other than what you have made, I don't think anything but the gray or black would look as good. I would use black binding.
