It's usually done with dried apricots. But you should be able to use ripe ones. Just cook them down.

Apricot Fried Pies
1-1/2 cups cooked dried apricots, mashed and sweetened to taste. You can also use any dried fruit.
Roll pastry 1/8" thick and cut in 5" circles. (I use refrigerated pie crust and use a saucer to cut circles.) Place about 1-1/2 Tbsp. fruit mixture on each pastry round. Fold in half and press edges together with fork tines to seal. Prick top in several places. Fry in hot oil (375 degrees until light brown, about 3 minutes. Drain on paper towels and sprinkle with sifted confectioners sugar if desired. (My mother fried them in an iron skillet with just enough oil to keep them from sticking.)

You can make some apricot liquor.
It's easy and very tasty!! You will love it.

#2.98 a pound at WalMart and they are overripe. How lucky can you be? They are very high in potassium so I eat them almost everday. I pited some, put in frezzer container and made a lite syrup. Now I;ll have apricot sauce all winterplus peaches and pears sauce. Good Luck tincanApricots

I LOVE to dry them. Also..puree and dry on saran wrap..after dry (in oven overnight about 150) roll up (on saran wrap..has to be that brand) and store in jar. GREAT fruit roll up. Can also puree and freeze for later baking or jams.

My mother made a terrific apricot cobbler. Oh, my mouth is watering for some. Don't see too many apricots around here (I' grew up in Texas.)

If you don't have time to deal with them right now, wash and put in a plastic bag, seal shut, and in the Fall, take our, boil well, discard the seeds. Chop well, or if you have a food processor, process to a smooth pulp.
Have some Pen-Jel or Sure-Jell on hand and follow the recipe for Apricot Jam. Or, if not listed for Apricot Jam, just use the recipe for Peach Jam. Follow the directions to a "t" put into jars and store in the bottom of the fridg. for Christmas Presents, or even get out and eat!
