Is there a reason to do this?

For those of you pre-pressing and setting your seams - do you press on just one side or both sides of the seam? I have found myself spending large amounts of time pressing first down one side of the seam, then turning the fabric and pressing along the other side of the seam before folding and pressing the seam to one side. It takes a lot of pressing and I'm not sure if it makes a difference to do both sides or not. I like the flat look of the seam before I start pressing to the side, but looking at all the people who do not bother might let me save a bit of time in the future.
