    Hi, I always had a problem with hard boiled eggs, especially with fresh eggs. Have finally got it right. I boil eggs for 20 mins. at a boil( not a hard boil). I immediately run cold water over them until cooled off some and drain and put in fridge.
    Now the trick is to crack and roll the egg and the shell just pops off most of the time. Give it a try, it works!

    I boil my eggs in the pressure cooker on low pressure. Peels really easy.

    I also sprinkle salt in the water and put them into real cold water, I don't use ice. I boil them about 20 min.s as I was taught years ago. When they cool off some I crack them and refill the pan with real cold water. Always lots of ways to achieve the same result.

    I make hard boiled eggs like Mom did: Bring to boil and simmer for 11 minutes then drain and cover with cold water and let sit until cool. I throw ice cubes in the water because I have an ice maker. Rap the large end on the counter and they peel like a dream. It doesn't work if eggs are really fresh, however.

    Ice bath. I start by putting the eggs in cold water, bring to a boil and turn off the heat for 15 minutes. Then drain the water and cover with ice. I add a little cold water to bring the temperature down quickly. (stops the eggs from cooking further). I leave it there (usually in the sink) until completely cold. I have no problem with removing the shells.
