    Default What are you having for dinner tonight?

    I'm making a 9" flour tortilla stuffed with leftover chicken breast, sauteed sliced red bell pepper/white onion/canned mushrooms, leftover black beans, sour cream, and homemade salsa.

    Put this on a Corning ware plate, rolled and stuffed, topped with salsa and shredded cheese, then bake about 15 minutes.

    Sometimes after baking I then top that with shredded lettuce, chopped tomato and more salsa.

    I get so tired of thinking up stuff to cook for dinner by myself; guess that's why I eat out so often, even alone.

    I hate eating out by myself. Just won't do it. I always cook up extra for lunch through out the week. DH will be home for supper as always. It'll be ham steak or brats tonight. if he isn't going to be home for a meal I just sometimes have a bowl of oatmeal. Or have fixed breakfast tacquitos.

    We had sloppy joes on ciabatta bread. The bread just didn't go well with
    the sloppy joes.

    So the rest of the ciabatta rolls will be had with lasagna or spaghetti later
    this week.

    I made a crock pot recipe - 2lbs butternut squash cubed, slap on a pork tenderloin, top with some minced garlic and some orange marmalade. cook on low. A taste of it is yummy. will be dishing it out soon.

    Quilty-Louise - I like soft rolls with sloppy joes, or pulled meats.

    I can't decide. We're limited right now-I only have the microwave, a ninja cooker (like a crock pot but also does regular cooking), a griddler, and a toaster oven. So one dish recipes are easiest. But I'm sick of all the same things I've been making. Right now I'm cooking bacon and will either make pancakes to go with it, or something else. ha.

    I can't wait to get our stove put in. It's sitting in the living room right now and hopefully dh will have time to get it installed soon. I haven't had an oven or stove for a couple of months.

    Swedish meatballs here.

    I doubt I'd ever really cook if I were alone. I think I'd be the queen of junk food. That's kind of sad to think about, but I'm pretty sure I'm too lazy to cook for myself.

    Turkey, gravy, stuffing, peas, cranberry sauce and iced tea. A meal most folks would call "Thanksgiving". I make turkey dinners at least once a month. Husband would like if I made it weekly! We don't celebrate the actual Thanksgiving holiday (unless we are invited to someone's home) but love the turkey dinner. Just waiting for DH to get home from work.

    I am probably in the minority - I don't mind going out to eat alone. I will occasionally go out for breakfast or for Chinese/ Thai/Vietnamese food for lunch (husband not wild about oriental food). I usually bring a good book or the newspaper to read during my meal.

    Dinner tomorrow? Probably meatloaf and veggies. DH will be a happy camper again!

    Jan in Va: What time's dinner and can I come eat with you? (I am in New Hampshire so you'd have to keep it warm for a while...LOL). Sounds absolutely delicious!! Love, love, love, TexMex type food. Homemade salsa? Wow! Enjoy.

    I just end dragged my worn- out self home from a 3 day quilt retreat. It's left over lasagna,rolls and grapes tonight.
