Whats your favorite type of Apple?

I don't care for fruit, mainly because it's too sweet. So I generally don't eat apples. But I really do like a variety called the Arkansas Black. Most folks don't care for it, but it's tart and cooks really well. I like it for eating and cooking. It's the only one I can say I really enjoy.
