    Default No bake Mock Eclairs

    2 small vanilla instant puddings
    3 cups milk
    1-8 oz. cool whip, thawed
    1-16 oz. box graham crackers

    Line 9"x13" pan with crackers. Mix pudding and milk - set aside til thickened - about 2 or 3 mins.
    Fold in cool whip. Pour half the mixture over crackers. Add another layer of crackers. Repeat the pudding. Top with a final layer of crackers. Pour icing over and spread.

    Icing: 2 sq. unsweetened chocolate - melted. Add: 1 1/2 cups powdered sugar, 1 tsp, vanilla, 3 TBSP butter, 2 tsp. light Karo syrup and 5 or 6 TBSP canned milk. Mix wel, pour over pudding and crackers. Refrigerate overnight.

    Those sound yummy. Will have to try it if I can find the gluten free Gram crackers. DH can't do any gluten. Gets deathly ill. Thanks for posting it.

    Oh - after copying recipe and looking closer - 2 questions - I assume you melt the butter before adding to mix and are you using sweetened condensed milk or evaporated milk? Thanks.
