I know some rhubarb recipes have been posted already but I wanted to share this recipe that was given to me after I had tasted a new friend's rhubarb crunch. It was just so delicious and I normally do not like rhubarb all that much. I hope you will try it.

RHUBARB CRUNCH

1 cup flour
3/4 cup uncooked oats
1 cup firmly packed brown sugar
1/2 cup melted butter
1 tsp cinnamon

5 cups diced rhubarb

1 cup sugar
2 Tbsp corn starch
1 cup water
1 tsp vanilla

Preheat oven 350*

Mix flour, oats, brown sugar, butter and cinnamon until crumbly. Press half of mixture in 9 x 9 glass baking dish.
Cover mixture with diced rhubarb.

Combine sugar, corn starch and water and cook until thick and clear, then add vanilla and stir in.
Pour sauce over rhubarb. Top with remaining crumb mixture and bake 45 to 60 minutes.
Serve warm with vanilla ice-cream. Enjoy!
