Crockpot "fiesta chicken"
I like this because I can throw it in the crockpot, let it cook all day and go work on quilts...
Also it makes a lot and reheats well if you like leftovers.
[h=3]Ingredients <small>Nutrition</small>[/h] <label>Servings</label> 4-6 <label>Units</label> US
  • 5 chicken breasts (I use the family size package of 5 that I store in the freezer)
  • 1 (15 1/2 ounce) can black beans, drained
  • 1 cup frozen corn
  • 6 ounces black olives, drained (sliced black olives)
  • [SUP]1[/SUP]⁄[SUB]2[/SUB] onion, chopped
  • [SUP]1[/SUP]⁄[SUB]2[/SUB] red bell pepper, chopped
  • 1 (15 ounce) jar salsa, medium
  • 1 (8 ounce) package cream cheese
  • 1 -2 tablespoon taco seasoning (I use Taco Bell or Lawry's Taco Seasoning)
  • [h=3]Directions[/h]
    1. Add all ingredients to crock pot EXCEPT cream cheese & yes, you can add the chicken breasts frozen.
    2. Cook on high for 4-6 hours or low for 8 hours.
    3. Add the package of cream cheese (whole) to top of cooking chicken mixture for last 30 minute of cooking.
    4. Serve over cooked rice or egg noodles with a dollup of sour cream & sprinkles of shredded cheddar if desired.

We eat a lot of salad during the summer. Fresh and cold is always good. Caesar salad is oh so good and filling and different. Pinterest has tons of salad recipes. if a recipe calls for chicken buy a cooked chicken at the market. they are about the same price as a whole chicken. heck a whole chicken here is 12.00 so I think a cooked one is almost half that price! I also bought a ring of shrimp the other day. half for snacks for the man and half for a salad I make with shrimp with a basil jalapeno dressing. yum... any fruit salad is a nice side with a pasta salad or green salad. I also made a huge tray of enchiladas the other night. late like at 10 pm late. then.. we now have enchiladas that we can nuke for easy meals later on. I find cooking later at night is easier on the heat factor and keep the window wide open and the doors open til its finished cooking. fans flying high speed ahead lol. salad with chicken and grapes is delicious!

ok my mind went into overdrive. Pinterest has killer summer salad recipes you should check them out.

my favorite summer salads: a salad of spinach or baby salad greens with feta, strawberries and candied pecans. omg so good. second favorite is a salad of baby greens, with sliced fresh pears, candied pecans and feta cheese with a rice wine vinegrette that makes it over the tops. its so simple, can be arranged beautifully on your plate and then topped with the sweet rice wine salad dressing? fills me up, looks beautiful and well who doesn't like candied pecans? I have made it with plain pecans and they are fine too those two are absolutely my most favorite and also loved by guests just as much. you could add chicken if you would like a more filling salad. both ways are great! again pinterest has a ton of salads to check into as does all recipes and other sites just type in SALAD and your going to find so many you will never have enough days to make them all!

My easy go to lunch is similar to Greek salad.

Cucumber, Pepper (whatever colour is on sale) tomato, feta and chick peas. I do not put in red onion when I am eating it for a work lunch. I find that 1/2 cuc, a whole pepper and a whole tomato is enough for two lunches. I pack the feta, chick peas and dressing separately. If I have olives I will add them, but I do not miss them.

I tried with just the feta, but was really hungry soon after eating it. Adding the chick peas gives it staying power.

In the hot weather I use canned chick peas, it is too hot to cook 'em.

For dinner we eat bbq burgers at least twice a week.

Yogurt Pie: Have everything open and ready to go. Need 1 tub frozen whipped topping (thawed), 1 small package sugar free jello, 1 graham cracker crust, 1 small container yogurt (individual serving size). Any flavor yogurt and jello can be used, but they must be the same flavor. Dissolve jello in 1/2 cup boiling water in large bowl. Add yogurt and stir until smooth. Fold in whipped topping. When combined well, pour into crust. Cover and refrigerate a few hours. Light as air and refreshing in hot weather.

If you have these made ahead and ready in the freezer, all it takes is the time to pop them in the crockpot.

HAM BALLS: Combine 3# ground ham 2# ground pork, 2 cups quick oatmeal, 2 cups milk, 1 egg. I use my Kitchen Aid mixer to mix. Make small ham balls and put in greased baking pans with sides. Ham balls can be touching. Mix up sauce: heat to dissolve sugar but don't boil. 1 cup white or cider vinegar, 3 cups brown sugar (or less), 1 cup water, 2 Tblsp. prepared mustard. Pour over ham balls. Bake 90 minutes at 350. When cool, store in freezer containers. Our meat market has ground ham and pork in the meat case.

Can you use Greek yogurt? Or does it have to be regular yogurt? This sounds really good.

Never tried Greek yogurt. It should work ok.

Wraps. I usually add two kinds of sliced cheese and broccoli slaw, sometimes spinach or humus.
Also, I cut up lot of melons and keep them in a bowl in the fridge.
