I stop in to visit a few times a week and have noticed they have had Mac n cheese and hotdogs. He is a 200+ pound man I dont think he is going to be as happy as the kids eating the same thing several times a week...lol..I bought him a crockpot for christmas and he thought it was the best thing since buttered toast...lol..i have a few recipes scaled down for him ...anyone willing to help out? Thank You

Oh, the crock pot should really help him! I dont have any real recipes, I just throw a small roast in it, any kind of met, then add carrots, onions, potaotes, and water mixed with Lipton dry onion soup mix. Cook all day on low, YUM!

Lasagna in a crockpot. Just layer cooked lasgna noodles with the sauce meat, and cheese layered up, can throw in sliced mushrooms place on low makes a great meal to take to a shut-in too. Also meatballs (frozen-- add equal parts hickory barbeque sauce with apple butter)

I've put some quick, easy recipes in this section.
My best hint is to buy lean hamburger in bulk, cook it crumbled up (which can be done in the crock pot) then drain it, put it in 1qt freezer bags and put those in the freezer. It's great for making fairly instant meals of Hamburger Helper, chili, spaghetti, hamburger casserole (the recipe for a healthier version of that w/veggies is on here), or anything else that requires hamburger.
I have a friend that's a professional fireman and he says to NEVER leave a crock pot on while being gone from home. He says that many house fires are started by unattended crock pots. My suggestion is to fix things in bulk that can be divided and frozen.
However, here's a quick and easy recipe
Cut a large round steak into bite size pieces
Brown, drain and place in the crock pot
quarter several potatoes and add them in.
Drain a can of mushrooms and add them
1/2 c. of A1 sauce mixed with enough water to cover the meat, mushrooms and potatoes.
Simmer in the crock pot for several hours until meat is tender
Add drained corn, peas, carrots, black eyed peas or any other type of veggie desired. Cook until these veggies are hot.
This can be eaten alone, served over rice, noodles or mashed potatoes.
Add salt and pepper to taste.
