Pumpkin Cream Muffins

1- 1/3 cups sugar, divided Correction by Moderator
1-1 1/4 cup all purpose flour
2 tsp cinnamon
1 tsp baking soda
1/2 tsp salt
3 eggs divided
3/4 cup oil
1 cup canned pumpkin
8 ounce cream cheese soften

Combine one cup sugar, flour, cinnamon, baking soda, salt, 2 eggs, oil and pumpkin. Set aside.
In a seperate bowl, blend together cream cheese, remaining sugar, remaining egg.
Pour pumpkin mixture into greased muffin cups, fulling 2/3 full. Place a heaping teaspoon of cream cheese filling in the center of each muffin. Sprinkle each with one teaspoon topping mixture.
Bake at 350 degrees for 15-18 minutes. Makes 1 1/2 dozen muffins.

Topping:

1/4 cup sugar
1/4 tsp cinnamon
3 Tablespoons flour
2 Tablespoons butter

Combine all ingredients until crumbly.

Deanna I used to cook at a preschool and the kids loved pumpkin muffins..I added choc chips in them!! It sounds weird but tastes really good!! This sounds like a yummy recipe...thanks for sharing...I have been looking for a good one for pumpkin fudge too..so I will be sure to try the recipe you posted for that too!! crafty_linda_b

Please help me out with the amount of flour and sugar. Is it 1 cup plus 1 1/3 cup?
