    Default Stuffed burrito

    Last night I had some leftovers so I decided to play "Chopped". Using already sauteed onions and peppers, I added to them
    some sliced yellow squash,
    sliced mushrooms,
    couple spoonsful of leftover taco meat, and a
    half cup of canned black beans from the refrig and sauteed them altogether.
    I heated a flour tortilla in the microwave about 25 seconds,
    spread it with sour cream,
    topped that with grated "Mexican cheese" (Kroger),
    poured on a bit of salsa,
    and piled on the filling.
    Rolled and turned over the tortilla, topped with a bit more salsa and grated cheese, and baked it for about 18 minutes at 325.

    Sometimes when I make one of these I top the baked burrito with chopped lettuce and tomato and call it "Deluxe"!

    Sounds delicious. Meals like that are my favorites. I see using leftovers as a challenge.

    Great way to use leftovers. I keep tortilla on hand for just about everything. I also turn them into chips for chili or soups.

    I've done similar using leftover roast. Makes like a fajita.

    We love burritos and have the breakfast ones fairly often.

    4 oz. bulk sausage browned and drained
    2 soft scrambled eggs
    shredded cheese of your choice
    salsa

    Mix, heat, and serve rolled up in heated flour tortillas. Makes 4 servings.
