    I fixed chicken and noodles, corn and mashed potatoes.

    I used the

    Das Dutchman Essenhaus narrow homestyle noodles made by the Amish.

    My mom found that at her local grocery store. They are made by the amish from Middlebury, Indiana

    Love this thread...I am so tired of cooking the same stuff, and need NEW ideas, LOL!
    I am in Wisconsin, and last night we had grilled venison chops, a rice side dish, I just chopped up asparagus I picked and added it to rice with a bit of LO soup, and a fresh salad with greens from my garden. Trying to save money!

    This is an easy great tasting, low fat, satisfying recipe,the fillinig holds up well in the frig for a week!
    This serves 3, It's just my husband & myself, so increase the amounts if you want to serve more people.
    Spinach Black Bean enchilada casssorole:
    Filling:
    2 C, frozen spinach, thawed.
    1/2 can drained , rinsed black beans
    1 C. Salsa , separated-
    1 to 2 Tbls Taco Seasoning
    1/3 C. Shredded Fat free Cheddar cheese
    Topping:
    1/3 C. Fat free plain yogurt
    1 Tbls Lemon, or Lime Juice
    2- 6 inch corn tortillas
    Pam spray
    oven proof dish big enough to fit the tortillas into, ( I use a Corning ware souffle' dish, fit the tortillas perfectly)
    mix the filling,including 1/2 c salsa; spray pan lightly, spread 1/4 c salsa on bottom of dish, place one tortilla on salsa, put all the filling in , cover with the other tortilla, and 1/4 c salsa. Cover with Aluminum foil, bake at 350* for 30 mins, uncover ,mix yogurt & juice, spoon yogurt mixture on top, bake uncovered 10 mins.
    You could microwave this if you wanted, or, use the filling for burritos
    This is adapted from a recipe in ' The American Heart Assoc. Low Fat, Low Cholesterol cook book'.

    Okay, here's another easy yummy one.
    Aegean Talapia:
    Serves 2.
    2 peices of talapia
    2 cups frozen spinach, thawed
    2 Tbls bread crumbs
    1/2 C crumbled Feta cheese
    pinch of crushed red pepper flakes
    1 tsp Mrs Dash
    Pam spray
    Oven/microwave proof dish.
    combine the spinach, bread crumbs cheese and seasonings in a bowl.
    spray the baking dish with pam, place both peices of fish in the pan, cover with the spinach mixture. Bake at 350* for 25 mins; or microwave ( covered... the fish will explode!) for 5 to 10 mins, check after 5, fish cooks pretty fast.

    Tonight were just having spagetti, just jar sauce over noodle, asparagus from the yard and garlic bread. I need to grocery shop!

    I am just starting to LOVE to cook! I just moved out on my own (21 years old...thought it was about time haha) My new favorite is super easy, but super yummy!

    BBQ Chicken Pizza Sandwich

    Cook chicken (I just boil it because I'm too impatient for a crock pot)
    After chicken is cooked, cut or shred, and add BBQ sauce to the pot, heat
    Add FRESH cilantro (so amazing!)
    Red onion, optional
    Let simmer to blend flavors
    Toast bread ( I like whole grain sandwich flats)
    Add the BBQ Mixture to the sandwich, top with mozzarella cheese
    ENJOY!!!
