Default treats for diabetics

I am trying to find some Christmas treats or candies for my diabetic friend.

I recently saw peanut clusters with unsweetened chocolate, a little cream , melted add splenda or other sweetener... and nuts... Has anyone done this... hate to waste the ingredients if it is bad...

Check the Splenda site for 'Sugar Free Chocolate Chip Cookies'. They are hubby's favorite. I do change one thing...the recipe calls for brown sugar and I use Splenda Brown Sugar Blend. Also great to use the mini chocolate chips.

I am diabetic and prefer to eat less of something than something that doesn't taste good. You are much better off asking your friend what she likes. High fiber like oatmeal cookies are good. If you go one the website for the American Diabetic Assoc. you can usually find some good ideas. Or google diabetic recipes. A friend gave me a jar of mixed nuts from Sees Chocolates one year - that was great. Assorted cheese and cracker platter is good too.

You only need to remember a couple of simple things to be on the safe side: all carbohydrate converts to sugar when you eat it, fruit and milk sugars are better than glucose and artificial junk but must be taken in small quantities. Do not over indulge at any meal, try to eat low GI foods and exercise.
I keep a mental note of what I call 'every day' food and 'sometimes food' and it works for me. Good luck with your choices.

I've made this for my diabetic son before. He enjoyed it.

[h=1]Diabetic Fresh Apple Cake[/h]
  • 2 cups Splenda granular
  • 3 Eggs
  • 3/4 cups Oil
  • 3/4 cups Applesauce
  • 3 teaspoons Baking Powder
  • 1-1/2 teaspoons Salt
  • 1/4 cup Orange Juice
  • 1 tablespoon Cinnamon
  • 3 cups All-Purpose Flour
  • 3 cups chopped Apples
  • 1 tablespoon Vanilla
  • 1 cup chopped Pecans
  • 1 cup unsweetened dried shredded Coconut
Directions
  1. Preheat the oven to 325 degrees. Generously spray a Bundt or tube pan.
  2. Dump all ingredients into a large mixing bowl (don't you just love one bowl recipes?) folding in the apples nuts, and coconut last.
  3. Pour batter into pan and bake approximately 1 hours
  4. Cool on a wire rack. When serving dust VERY LIGHTLY with powdered sugar (this should be for looks, not the sweet taste).

I also prefer to eat less of a goodie than goodies with artificial sweeteners. They are not good for my tummy!! Especially if I accidentally eat too many in one day (prepared foods). In general, it is not so much the sugar but the carbs (very general).

I agree with your advice and like your 'everyday/sometimes' comment. Splenda is NOT a good/healthy product and I do not follow the ADA food charts, I do low-carb with lots of fresh foods and am no longer diabetic.

I am a diabetic, and firmly believe that those sugar substitutes make me crave sugar. If I avoid them, I have many less problems with my A1c. I would rather have a half size serving of a regular desert than deal with the artificial sugars. I do try to figure out which goodies have the best nutrition. (When it comes to real dark chocolate fudge, all bets are off!)
