Get yourself a Ball Blue Book on Canning. The directions and photos are great to teach you how to do it. I canned 10 quarts of green beans today; 5 last week; 12 pints of tomatoes.

Love spiced peaches and crab apples at Thanksgiving time. They seem to go together to me.

My sister in law's mother all 4 ft of her used to can everything Her husband said that she used ever bit of the pig when she canned pork even the squail.

I used to can peaches also (have to drive 90 miles one way to get them in bulk). And I made Peach Rum Jam that was to die for. Also Watermelon Pickles. Haven't made them for quite a while as there is only myself in the house now.

I was reading an article that said that an added bonus (I guess all bonuses are "added", aren't they? Sometimes I'm so dumb I surprise even myself! LOL!) to the drought was that what crops didn't burn up actually were super good... like the peaches were super sweet & the peppers were extra hot. Has anyone found that to be true?

its really easy to can peaches .. she may even enjoy really helping instruct you !

We just did several jars of Taco Salsa, pureed some more peaches (froze that in the capacity needed for jam for later on in the winter to make!), we are going to can a bunch more items before too long. I love a well stocked "Canned" pantry.

Wow Gennie: sounds like you have been very busy and I hear ya about the quilting time !

Canning to me is just good for a cozy winter night and the smell when you open the jar of the fresh fruit or vegetables, the taste .. YUMMY !!!!!!

I tried these once and they just weren't good. I don't know if I did something wrong. I do remember it taking a long time to get the watermellon rind cut up.
