Sweet Potato Souffle

1 lg can sweet potatoes (30 oz)
1 tsp vanilla
1/2 c butter
1 tsp cinamon
1 cup sugar
3 eggs
1/2 cup evaporated milk

Drain sweetpotatoes. Beat well. Add remainder of ingredients. Beat until fluffy. Pout into a buttered cassarole dish. Bake 20 minutes at 350 degrees. (now for the yummy part)
Combine: 1 cup brown sugar
1/3 cup flour
1/3 cup melted butter
1 cup chopped nuts
Blend with fork. Sprinkle on top of sweet potatoes. Bake 10 more minutes.
This is sorta like my recipe but you can bake the sweet potatoes and then mash them. I make a praline topping like Sarah's.

I make them for my mother often as she can only have soft foods. I peel, boil and mash. To the mash I add applesauce and cinnamon. If to thick will add milk. So yummy.

I bake my potatoes, let them cool then scoop them out. Or you can do it the cheater way and buy a can of sweet potatoes. I actually use canned sweet potatoes to make sweet potatoe pie and sweet potate bread.
I like plain baked sweet potatoes however this is the Sweet potato recipe that I would bring to family gatherings years agao. Evryone loved them

I whip my sweet potatoes with butter, brown sugar, cinncmon and 1 small can of chopped pineapple. Pile into a baking dish. Bake about 1/2 hour then remove from oven top with marshmellows and return to oven until golden brown.

Add applesauce? Never thought of that. Sounds yummy with the cinnamon.

Us too, I just add margarine and salt and pepper. We have them a lot, well often. I was at a restaurant recently and they had sweet potato fries! OMG!!! Delicious! crusty on the outside and sweet inside! I bet you could do it at home and cut them into a bowl, put olive oil on them and oven fry them, maybe turning them once in awhile. Maybe pat them dry before adding the oil. I am going to try it!!!
