    This is from the January February 2010 weight watchers magazine.

    Herb-Onion Tart

    Prep 15 min
    Cook/bake 45 min
    Serves 2

    1/2 tsp olive oil
    1 sweet onion, thinly sliced (3/4 pound)
    1/4 c water
    1/4 tsp salt
    4 kalamata olives, pitted and chopped
    1 tsp chopped fresh thyme
    1/4 tsp black pepper
    2 (12 x 17) frozen phyllo sheets, thawed
    2 TBSP shredded fontina cheese

    1. Preheat oven to 400 degrees Faraheit. Spray baking sheet with olive oil nonstick spray.
    2. To make topping, heat oil in medium nonstick skillet over medium-high heat.
    Add onion, water and salt
    Bring to boiil
    Cover
    Reduce heat and simmer, stirring occasionally, until onion is very soft (about 20 minutes)
    Remove skillet from heat
    Stir in olives, thyme, and pepper
    Let cool slightly.
    3. To make crust:
    Place 1 phyllo sheet, keeping remaining phyllo covered with damp towel and plastic wrap to prevent it from drying out, on dry cutting board
    lightly spray with olive oil nonstick spray
    repeat with remaining phyllo to make 2 layers
    Cut into 4 rectangles.
    Place rectangles on top of each other to form a stack.
    Roll edges of phyllo to make small rimmed edge
    transfer crust to baking sheet
    4. Spread topping evenly over crust.
    Bake until edges of crust are golden brown (about 20 minutes)
    Sprinkle top evenly with fontina and bake until it melts (about 5 minutes)

    0 G Transfat
    6 MG chol
    471 MG Sod
    30 G. Carb
    4 G Fib
    6 G prot
    109 Mg Calc

    Brunch Bake - 3 pts

    This needs to be made the night before so it can sit in the fridge.

    8 frozen hash brown potato patties – can use shredded hash brown(16 oz = 8 patties)
    1 pkg (8oz) thinly sliced ham, chopped or Canadian Bacon
    1-1/4 C shredded reduced-fat cheddar cheese, divided
    2 C skim milk
    1 can (10.75 oz) low-fat condensed cream of mushroom soup
    Egg substitute = 4 eggs
    1 t. ground mustard
    1/4 t. pepper

    Place potato patties in a 13 X 9 X 2" baking dish coated with nonstick cooking spray.
    Top with ham and 1 cup cheese.
    Combine milk, soup, egg substitute, mustard and pepper; pour over cheese.
    Cover and refrigerate overnight.

    Remove from the fridge 30 min before baking.
    Bake 350 for 1 hour.

    Uncover and sprinkle with remaining cheese.
    Bake 20-25 min longer or until a knife inserted near the center comes out clean.
    Let stand 10 min before serving.

    12 servings

    122 cal, 463 mg sodium, 13 mg cholesterol, 9 gm carb, 11 gm protein, 5 gm fat, trace fiber

    Hula Scramble
    From Hungry Girl 200 under 200

    ½ cup fat free liquid egg substitute
    2 oz (about 4 slices) thinly sliced extra lean ham, chopped
    1 canned pineapple ring, packed in juice, chopped
    1 wedge Laughing Cow original Swiss cheese, cut into pieces

    Bring a pan sprayed with non stick spray to medium heat. Add ham and pineapple. Cook for 2 minutes, stirring occasionally.

    Add egg substitute and scramble with the ham and pineapple. Once it is a little more than halfway cooked, add cheese pieces. Continue to scramble until cheese has melted and egg substitute is fully cooked. Eat up!

    Fat: 3.5g
    Carbs: 11.5g
    Fiber: .5g
    Sugars: 8.5g
    Protein: 24.5g

    This is soooo important to remember...
    muscle weighs more than fat...so scales can even go up, and that be a positive thing...
    BECAUSE Muscle movement burns calories and so helps us loose weight by burning back the fat ...

    that is why most successful diets have exercise as an equal partner to food quality, and calorie, fat and carb limitations.

    That is what inspires me to exercise even when it hurts. Besides that I fantasize that someday I can ride my Morgan horse, Juliette while my DH rides her dh Romeo...I heard that they are making adaptive saddles for the disabled...question is how to get me up in the saddle and down when my spine needs a break...I could get up from a deck or using a step stool, but if I need to dismount along the way...then what?

    My spine is gravely injured and weight loss is never going to make that better. It is a permanent and degenerative condition. I do not want to discuss it further. Everyone pm's me with Q & A's thinking it will not bother me to discuss what happened and whys, but it does. So please be a true friend and respect that I just don't want to have to keep going over the past...I want to focus on the future.

    I do need positive remarks, support and prayers.
    Tonight I have to make a real choice.
    Company here from Arizona...and I live in Florida.
    I can take my heavy duty, addictive in nature pain meds, be out of pain and just sleep and allow my body to relax...

    Or I can be in pain with spine hurting and muscles spasmodic adding to the pain by exponents...and eat a lovely salid with the rest of the famiy that is enjoying a big BBQ...watch my grandchildren play in the yard...listen as my family chats happily about the day's big accomplishments...my sewing room ...and wait for my horses to come over for some loving...we do not feed them people food...but after dinner, we will open the gate and allow them in the part of the yard where we are...

    honestly they are like a part of the family and as gentle as huge dogs...they lower their heads for the grands to kiss their muzzles, and beg for the grands to ride them...get jealous if they are not chosen to saddle and ride. We do not own enough saddles for all the horses to be ridden at one time...

    Blood sugar has been really good and low this day...
    am bs reading was 74, and at 6 pm was 97

    OH BONNIE!!! I so love the Hungry Girl! I bought her newest two cookbooks yesterday. i just love her recipes...plus I can count on what ever she writes has the correct nutritional info and it will be yummy! The HG makes me happy. HEHE

    No kidding. That is great. I think our WalMart had one but I didn't really know what it was. I'll have to go and look more carefully now.

    I feel positive today. I went to church and that tends to put a positive slant on my life.

    I drank three juice glasses of prune juice today. My advice don't do this. :?

    It's been hot here, but I've been able to keep up the bike riding. It's better to get out in the heat than try and avoid it all day.

    I am glad you went to church. Getting a positive start to the day is always good.

    Three glasses of prune juice? Not a chance in the world would I do that! hehe! I drink one bottle of water a day that has three packets of Benefiber in it and the great thing about that is that the benefiber completely dissolves, doesnt change the taste and it does not cause the water to be thick or gritty. That helps my tummy more than I can say. Or should I say dare say? LOL

    Bike riding in the heat? Not so fun. I hate the heat. So, I do my workout at the indoor pool. I am a big baby when it comes to the heat. LOL!
