We had taco salad tonight. We mix the regular taco sauce and meat then put it over "salad" with sour cream and have at it! It was awesome.

I didn't know what it was going to be a half hour before I made it: Hash. I partly cooked a couple of potatoes in the microwave, chopped up some onion, poblano, mushrooms, a little ham and leftover rotisserie chicken. Diced the potatoes (skin on) and threw it all into an anodized non-stick skillet with olive oil and just a little butter so it would brown. Ready in minutes and we love it. I was going to put some shredded cheddar on it but forgot. We don't need the cholesterol anyway. Hubby likes Tiger Sauce on it, but I used only salt and pepper on mine. There are leftovers, and I look forward to heating that back up and stirring in a little egg substitute for breakfast - maybe in a tortilla, maybe with shredded cheese. Dessert was some sliced fresh plums with a little Redi-wip.

My dinner was 2 slices of toast with peanut butter on them, husband had 2 hot dogs. Not what you can call a real balanced diet.

Ended up having the spinach pie with a little bit of ham. I'm currently learning that I can't have that kind of "heavy" fat any more. (don't have a gall bladder to help digestion).

Left over half of a Reuben sandwich and onion rings from lunch. My b-day is on Saturday and my boss and office staff took me out to lunch. Marion berry custard pie for dessert! Yippee!!!
