One of our favorites and very easy to make.
Devil's Food Sandwich Cookies
1 box devil's food cake mix
2/3 c. oil
2 eggs
Mix together. Roll dough into marble sized balls. Cook on cookie sheet for 8 minutes @ 350. Remove and cool on rack. Spread vanilla frosting on cookies and make sandwich. I prefer cream cheese frosting, but husband loves vanilla.

Here's the story I was told about the "Nieman Marcus" Cookies:
A lady was at the Nieman Marcus restaurant and was so enamored with the
dessert cookie, she asked the waiter if she could have the recipe.
He said yes, it was 2 and would be added to her bill.
She paid by credit card and later when she found out she had been
charged not 2.00 but 200.00 she vowed to get the recipe out to as
many ppl as she possibly could, bc she was so angry.
I don't know if one word of this story is true, but I know the cookies
are beyond delicious! (I freeze some after baking for gifts, and
have been known to eat them frozen and had to make more! )
This is a large recipe and if you make the cookies small, you can get
as many as 200 count. You may want to make big ones or cut the
recipe in half.
*YOU NEED A HEAVY DUTY MIXER WITH DOUGH HOOKS*
I have tried mixing by hand - impossible. A regular mixer will burn up
as this is a very dense dough, but worth every step.
NIEMAN MARCUS COOKIES
2 c. butter
2 c. sugar
2 c. brown sugar
4 eggs
2 t. vanilla
4 c. (all purpose) flour
5 c. oatmeal
1 t. salt
2 t. baking powder
2 t. baking soda
24 oz. chocolate chips
1 8 oz. grated Hershey Bar or milk chocolate chips
3 c. chopped nuts (pecans and Walnuts are good!)
Measure oatmeal and blend to a fine powder.
Cream butter and sugar
Add eggs and vanillia
In another bowl mix dry ingredients.
Add chips, candy and nuts.
Bake 6 - 7 1/2 minutes at 375* (test first batch for your oven variances)
Makes 112 medium sized cookies.
Portioned small can make as many as 200.
Recipe can be halved.
I have bought refrigerated rolls of chocolate chip and oatmeal cookies
and added milk chocolate chips for a faster/easier version, although
good, it's not THIS good.
I have also used self rising flour and omitted the baking powder and
baking soda.
I prefer White Lily Flour for this recipe.
You can make rolls of dough with waxed paper and refrigerate or
freeze it for later consumption. (also, this enable you to make
dough ahead).
Take one out and slice the dough equally and bake.

Just the mother of all urban legends about the Neiman-Marcus cookie, has been making the rounds for over 70 years - and in many incarnations. (woolworths, Mrs. Fields, etc.) Fascinating read!

Interesting - from the NM website - quite a different cookie. I guess people have changed it over the years as they passed it along. That's what makes for a good recipe!

The same story was told about the Red Velvet cake when it first came out in the 50's. I have hundreds of cookie and candy recipes and many cookbooks. I started with the Betty Crocker that was a wedding gift in 1957 and still go to it. I have cut out recipes from magazines for years. Wish I had the time and energy to make them all.
