i do not understand how 2 1/2" could be too short- or 3"??? if you cut 2 1/2" strips, attach to make long enough to go around the quilt + 10" then fold in half lengthwise- pressing as you go- stitch a 1/4" seam- raw edge of folded binding to outer edge of quilt- fold to back & hand stitch down you should have plenty to cover the seam from the front-
personally i think 2 1/2" bindings are too wide-unless on a flannel/heavier quilt- i generally cut mine 2 1/4" or even 2" i prefer thin bindings. a binding 3 1/2" wide would be like a whole additional border.

See I like thicker bindings. I usually cut them around 4 or 4 1/2" foldin half then attach. Then file to the back and usually hand sew to back unless I am in a rush or being lazy then I use a decorative stitch to attach to the back. I think of a binding as sort of a frame. But that is me. I would probably be laughed out of any guild or show bymy bindings.

The 3.5" binding fit perfect. I guess I have thicker batting then most because if I cut 2.5" strips and fold in half, they would not even come close to going around without tugging it tight. Posting a finished picture soon.

    2) Do you always press your binding before attaching to the quilt? I hate, let me rephrase that, HATE ironing. lol So do you press the binding in half then sew it onto your quilt or do you skip the ironing?

I have my binding ready to be ironed (or not) and I am so tempted not to press it but don't want to make a big mistake by not. So it is necessary to press before attaching?
For myself, I'd find it hard to handle without pressing.

I was confused with why a 2.5 inch binding wouldn't work til you said minky. I would use a walking foot to attach that one. Minky is so slippy. Good luck!! With regular fabric I always press I like the crisp but do whatever is easrier and works for you. I would do 3.5 for a minky because I always do 1/2 seams with minky and trim. Just me!
