Depending on where she served you might be able to collect autographs from friends, coworkers, students etc. and make an autograph quilt .

How about a Psalms Quilt? I made this one for a former student of mine who suffered a traumatic brain injury in an accident. Its a very simple rail fence pattern, and I made the top in a day. You can buy the panel with the psalms on it and the pattern to go with it. You just cut the panel and use it as one of the rails.

I made a rail fence for a lady at church who was taking chemo treatments. The centers were all ivory and all the ladies in our bible study group wrote our favorite verses or notes of encouragements on them. I like the Psalms quilt above. I also made a Double Cross quilt that was very easy and can be done in just 2 colors. It's available from [email protected]. Not affiliated with them just took a class and really liked the quilt.
